Pressed Duck Terrine, Compressed Plums, Plum Ketchup, Spiced Toast 

Duck legs are slowly cooked in duck fat thrn the meat is mixed with Shallots, Tarragon & Sherry Vingar then pressed over night. Plum ketchup adds a little acidity while the spiced toast add crunch.
